Cornbread Tamale Pie

Do you like sweet cornbread, mexican flavors and salsa?  Then this is the dish to bake for you! 

A hearty chili flavored meat on the inside and sweet cornbread on the outside.

A great and simple one dish meal. 

Cornbread Tamale Pie

1 box sweet cornbread mix

1 Lb. ground beef

1 jar 16 0z. salsa of your choice

2 tsp. minced garlic

1 tsp. cumin

3 tsp. chili powder

1 c. shredded cheese

1 can red beans, drained

1/2. chopped onion

Heat oven to 400 F.  Grease 13×9 pan (You could make two 8×8 pans).  Mix cornbread as directed on package.  Pour and spread thin layer (about 1 inch thick) of batter into dish.  Cook and drain hamburger plus onions in skillet on the stovetop.  Once drained, place hamburger back in skillet.  Add salsa, beans, garlic, chili powder and cumin to beef.  Bring to a boil, then spoon over cornbread batter within 1/2 inch of edge of pan.  Bake 23-25 min or until crust is set and light brown.  Remove from oven and sprinkle with cheese.  Let stand 5 min. before serving.  Top with sour cream and salsa once served.

You will have extra cornbread batter.  So why not put it in another dish and bake too.  Then you’ve got cornbread for your next meal, soup or roast the cornbread cubes for a great salad topping!

Simple.  Quick.  Cheap.

  2. Cornbread and chili is a great combination, so it only makes sense that this would be great. Simple too! Love recipes like that.
