Cranberries seem to be the fruit of the season.
Why not give the gift of a homemade snack mix. Or take a bowl to a holiday gathering to perk up the party!
Crunchy almonds. Chewy dried cranberries. Tangy orange juice. Does it smell good yet?
Orange Cranberry CHEX mix
3 c. CORN chex
3 c. WHEAT chex
3 c. RICE chex
1 c. sliced almonds
2 c. teddy grahams or goldfish grahams
1/4 c. butter or margarine melted
1/3 c. brown sugar
1 c. frozen orange juice concentrate (thawed)
1 1/2 c. dried cranberries
Heat oven to 300 degrees F. In large mixing bowl, mix together all cereals, almonds and grahams.
Microwave butter, brown sugar and OJ concentrate for 30 seconds or until fully melted. Pour butter mixture over cereal mixture, stirring until thoroughly coated.
Pour into two large roasting pans. Bake uncovered for 30 minutes, stirring after 15 minutes. Remove from oven, stir in cranberries. Cool completely. Store in airtight container or plastic food baggies.
*You can use your favorite combination of CHEX cereals, just make sure to use 9 cups in the recipe.
